Roll With It as Miami’s Newest Handroll Bar Gets Crispy at Pari Pari

There’s something instantly cool about Pari Pari, the new 24-seat hand roll bar by Chef Yasu Tanaka—yes, that Yasu of Michelin Guide Sushi Yasu Tanaka fame in the Design District. The name itself means “crispy crispy” in French, which fits perfectly for a place that’s equal parts playful and precise. Here, the sushi is every bit as exceptional as Tanaka’s flagship, but the vibe? Far more intimate and fun. Think dope sauces, hip hop anime tracks, and that kind of buzzy energy that makes you want to stay for “just one more hand roll.”

Our visit was for a special dinner celebrating the Sake Breeze campaign, a month-long sake celebration by JFOODO running through October 31 all over Miami showcasing the versatility of Japan’s most elegant export. We kicked off with the Yamizakura, a welcome cocktail by our dear industry friend Christian Suzuki (aka Suzu) that channeled a sake Negroni blendeding Born Muroka Junmai Daiginjo, cold-pressed strawberry juice, lapsang tea, and makrut lime leaf.

Here’s the parade of plates we devoured. Oyster with Japanese Salsa Verde paired with a Sake Martini. Tuna Ceviche with coconut and lychee. Crab Cream Croquette with uni miso sauce, served with a sparkling rosé by Ichid. A Shiso Granité palate cleanser that reset everything just right. A flurry of crispy, ocean-fresh hand rolls—each one better than the last. A showstopper special next: Crispy Rice with Wagyu Toro Tartare & Truffle, paired with Senki sake that amplified every bite

And just when you think you’ve seen it all, Pari Pari brings out dessert. French-Japanese pastries that are equal parts delicate and indulgent. We tried a housemade white chocolate gelato, matcha, crunchy genmaicha rice and brown butter cookie, paired with a Yuzu Sake & Cucumber Soda that tied the meal together with bright, citrusy flair.
