A South Beach favorite has arrived to the Miami mainland. Pubbelly Sushi, led by five-time James Beard-nominated chef, Jose Mendin, has started off 2017 debuting their second location of PB Sushi in Miami on the fourth floor of the newly opened Brickell City Centre – and we got the first look at the menu.
Taking the helm of the Brickell kitchen is Executive Chef Jorge Mijangos, who is dishing up favorites that we all know and love from the original location like the Garlic Hamachi Roll with Hamachi tartare, crispy garlic, cucumber, avocado and chili oil; the oh-so-decadent Snow Crab Roll with gomma soy paper, warm snowcrab, ponzu, claried butter and the Bigeye Tuna made with spicy tuna, “arroz pegao”, rocotto cream, sea salt.
Other non-sushi items include an assortment of robata grilled items like Sea Scallops with miso butter and yuzu-truffle sauce; French Onion Miso Soup made with soft tofu scallions, gruyere toast, onion confit; a variety of grilled veggies like the Truffle Corn with cotija, yuzu and truffle crema; and of course, you can’t forget dessert made by the one and only Maria Orantes like the Coco Loco with compressed pineapple, brown butter strussel, white chocolate blondie, coconut ice cream, coconut mousse and candied coconut chips.
New to the team is industry vet Will Rivas, who now serves as the Pubbelly Group Beverage Director and Head of Cocktail Development. Lending his expertise to Pubbelly Sushi, Rivas has reworked the Sake & Shochu menu including the Light Yagamia with Awa No Kaori Sudachi Shochu, charred pineapple, chipotle syrup, yuzu; Arsene Lupin III with sake, lychee shrub, shiso leaf, lemon, topped with sparkling sake, and the Ezra Scarlet with Awa No Kaori Sudachi Shochu infused with strawberries, lemon and topped with cava.
