A Weekend of Really Good Eating at Atlantis

If you’re heading to Atlantis, come with an appetite. You’ll need it.

Say hello to Ko Sa Wan, the new Thai pop-up tucked inside The Cove’s Perch, led by acclaimed Chef Ian Kittichai. The one behind Issaya Siamese Club and familiar face on Iron Chef USA, MasterChef Thailand, and Hell’s Kitchen Thailand. We kicked things off with Khao Tang Na Tang, a Cambodian-inspired bite that set the tone right away. Crisp rice crackers dipped into a creamy coconut and roasted peanut mixture. Then came the showstopper. Som Tum, pounded tableside like a performance. Green papaya, local conch, corn, long beans. Bright, punchy, spicy, and impossible to stop eating. From there, the mains kept the momentum going.

Pla Salmon Choo-Chee delivered silky salmon bathed in a rich red curry with makrut lime. Gaeng Massaman Nuea See Krong brought warm, spiced notes you’d expect from a curry with roots stretching into Indian and Persian kitchens, layered with tender short rib and potatoes.


And Gai Pad Med Mamuang hit that perfect sweet heat with chicken, cashews, and tamarind. Dessert? Not optional. Khao Neaw Mamuang might be the best version we’ve had. Coconut sticky rice, fresh mango, coconut sauce, mango sauce, and mango ice cream for a full mango moment.

Next day, different mood. Lunch at Sip Sip called for one thing and one thing only. The Lobster Quesadilla. It’s famous for a reason. Fresh local lobster, melty cheese blend, chipotle-lime crema, and tropical salsa. Order it. No notes.

Dinner at Paranza sealed the deal for this trip. Chef Michael White’s coastal Italian spot delivered across the board. We started light with Capesante, delicate raw scallops paired with butternut squash purée, black truffle, and toasted hazelnuts.

Then moved into Granchio, bright with crab, green apple, and citrus, plus a classic Misticanza salad. And yes, we had the pasta. The signature Spaghetti with Caribbean spiny lobster was everything you want. Simple, rich, and perfectly executed.

Dessert closed it out with a chocolate Torta layered with coffee caramel ganache and vanilla gelato.

One last thing because we didn’t know either. Atlantis is home to the first-ever resort Shake Shack, complete with breakfast starting at 8am, exclusive menu items, and cocktails you won’t find anywhere else. So yes, come hungry and maybe book an extra day.
