Vagabond Restaurant & Bar

MIMO’s Vagabond Hotel just underwent a multi-million dollar renovation with the last piece of the puzzle, its namesake restaurant The Vagabond Restaurant & Bar, opening this week.

Manning the kitchen is self-taught Alex Chang, who at only 25 has worked in notable kitchens throughout the world including Animal in L.A., Pujol in Mexico City, and Les Creations de Narisawa in Tokyo. For his menu at the Vagabond Restaurant, he infuses the flavors he developed from his travels into the menu.

The updated space is reminiscent of the hotel’s unique history, fusing retro elements with modern decor including the sunken bar in the center in the room. Images of modern day “Vagabonds” decorate the wall while Polaroids of the restaurant team serve as coasters on the table.

Chat Chow TV was invited in to get a first taste of the eclectic menu. Highlights included the Stracciatella with leek oil, watercress and perfectly toasted bread; a lemony Ricotta Gnocchi; an Heirloom Tomato Fattoush Salad topped with black sesame and sheep’s milk feta; Jerk Chicken Wings with smoked over fresh allspice leaves; Market Lettuces with baby veggies and grilled creme frachie; Iberico Skirt Steak with xato sauce, charred scallion and mojo canario and its Vagabond Burger a deliciously simple, two patty burger made with dry-aged beef, potato bun, B&B pickles and remoulade sauce.
