We love Matador Bar at the EDITION Hotel. With Angelo Vieira behind the bar making great cocktails as well as Bernie Waters, you are always in good hands.
Once again, the folks at Matador Bar have launched a new menu with seasonal classics. Here are our favorites:
MORELLINO
Maker’s Mark, Salers Aperitif, Morello Cherry Vanilla Syrup, Lemon Juice
Spirited Miami: A beautiful, refreshing take on a bourbon cocktail, a balance of sweet and sour finished with this light aperitif and of course a Filthy Cherry.
NEGRONI SBAGLIATO (SPAL-YAH-TOE)
Campari, Carpano Antica Vermouth, Prosecco
This “Incorrect Negroni” is a lighter twist on the Italian classic. Perfect for aperitivo.
Spirited Miami: A beautiful sparkling take on a Negroni, enjoy this one before dinner or as a lower ABV cocktail. We love this one and it’s a great fit at the Matador bar.
PENICILLIN
Dewar’s, Ginger, Honey, Lemon Juice, Peated-Scotch Rinse
Sam Ross’s “new classic” is the perfect refreshing remedy for whatever ails you.
Spirited Miami: If you haven’t tried this drink, do it now, at Matador. It’s a beautiful cocktail that will be around for years and years to come. It was invented in 2005 by Sam Ross and has become a worldwide favorite.
PALOMA
Avion Reposado, Fresh Grapefruit, Soda Water Pinch of Salt, Squeeze of Lime
This “Dove” of a cocktail is a refreshing way to cool off in the Mexican (or Miamian) heat.
Spirited Miami: A great classic cocktail perfect for the Miami heat. Fresh grapefruit livens up the agave as the bubbles from the soda water open up the bouquet of flavors.

We also just got word that there will be a new dessert section in the near future with boozy treats including a Milk & Cookies cocktail. We got a sneak peek.
Stop on by this weekend to try some of these amazing seasonal classics!
