Miami Chef Giorgio Goes To Austin – This Is What He’ll Be Making

Chef's Indie WeekThis weekend 30 of the country’s top young chefs will head to Austin, Texas to create three memorable dinners, talk shop and learn from their peers at the annual Indie Chefs Week.

Eating House’s Giorgio Rapicavoli is making his second trip to the event, representing Miami during the weekend. The first two evenings, 15 of the chefs do 15 courses — one each. The final evening each chef participates in creating the epic meal. The event is already sold out, but Rapicavoli gave us a sneak peek of what he plans to make.

Rapicavoli is getting into the kitchen on two different evenings, the first being Thursday, January 8, where he’ll be making Panna cotta of celeriac with elderflower, pear, and crisp milk. On Saturday, January 10, he’ll be partnering up with New Orleans’ Kristen Essig to make a Louisiana carrots with burnt kumquat and yogurt dish.

Everyone’s favorite Instagrammer and who Rapicavoli says will be playing “the ultimate foodie” for the weekend, Eric Saltzman, is joining along and documenting the whole thing on the Chat Chow TV Instagram account. So make sure to follow and get ready for a food porn filled weekend.
